Mediterranean-Style Kale Salad
Our muse, Meghan Markle, featured this delicious salad on her blog website, The Tig (RIP). Unfortunately, she shut down her site after she got serious with her now-husband, Prince Harry, but you already knew that. Thankfully Just Aneissa is alive, thriving, and here to allow one of Meghan's favorite recipes to live on. This salad is fresh, simple, and dynamic. It has the perfect blend of flavors with a sharp Greek flare.

Yields: 4 servings
Ingredients:
1 bunch fresh kale
1/2 red onion
1/3 cup chopped walnuts
1/3 cup cherry tomatoes
1/2 cup shaved parmesan
Dressing Ingredients:
2 tbsp extra virgin olive oil
1/2 lemon, juiced
1 tsp honey
1 tbsp balsamic vinegar
1/2 tbsp chili flakes
Sea salt to taste
Freshly ground pepper to taste
Directions:
Whisk together all dressing ingredients
Wash the kale, remove the stems, and thinly slice
Add the vegetables to the dressing and toss together
In a dry pan, toast the chopped walnuts for 2-3 minutes
Incorporate the salad and nuts thoroughly and top with parmesan shavings
