Zuppa Toscana Soup
Soup is an all-year-round delight for me. There is no right or wrong time of the year to indulge in soup, especially one of my favorite Italian soups, Zuppa Toscana! This hearty soup is packed with the bold flavor. It is guaranteed to soothe the soul.

Yields: 6 servings
Ingredients:
- 1 lb of mild Italian sausage
- 3 cups of kale, chopped
- 4 russet potatoes
- 5 cloves garlic
- 1 yellow onion, diced
- 64 oz chicken broth
- 1-2 cups heavy cream
- 1/2 tsp salt
- 1/2 tsp pepper
- Parmesan cheese for garnish
- Red pepper flakes for garnish (optional)
Directions:
- Cook the Italian sausage in a large soup pot
- Clean + thinly slice the potatoes about 1/4 inch thick
- Dice the onion and garlic
- Drizzle olive oil, sauteé onions and garlic in a medium-sized pan until translucent
- Add the onion and garlic to the pot
- Add potatoes and chicken broth into the large soup pot
- Toss the chopped kale, heavy cream, salt, and pepper
- Cook on medium heat for five minutes, or until incorporated
- Enjoy!
