Hash Brown Slow-Cooker Baked Potato Soup
Soup season is in full throttle! Nothing makes me happier than tossing a few ingredients in the crockpot and coming home to an entire meal after errands. This hearty soup is perfect for the whole family. Try this classic seasonal soup with a hashbrown twist.

Total Time: 3 hours and 35 minutes
Yields: 8 servings
Ingredients:
-1 20-ounce bag shredded hashbrown potatoes
(I used the brand Simply Potatoes)
- 32 oz chicken broth
- 1 cup water
- 1 tsp salt
- 1 tsp pepper
- 1/4 cup onion diced
- 3 tbs flour
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
Directions:
- Add broth, water, onion, salt, pepper, and potatoes to slow cooker
- Cook on high three hours
- Whisk flour and cream together until smooth. Add to slow cooker
- Cook thirty minutes on medium
- Add cheese and stir until cheese is incorporated
- Serve and enjoy!
This soup is perfect served with cheese, sour cream, bacon, green onions, and a side of crusty bread. It is also fantastic all by itself. Whatever you have time for, make it your own.
