Slow-Cooker Creamy Chicken Stew
I am one hundred percent about that crock-pot life. We are all busy people; what's better than your meal cooking while you are sleeping or being productive? This Creamy Chicken Stew is considered a "dump meal." Which means, it does not take any precooking and it does not require much back work. This recipe is simple, delicious, and perfect for that boss babe who needs to get things done!

Yields: 4-6 servings
Ingredients:
- 1 pound of organic chicken breast, boneless skinless
- 1 clove of garlic
- 1 cup of carrots, diced
- 1 stalk of celery, diced
- 1 tsp parsley, dried
- 3 red potatoes, medium-sized
- 1 cup of milk (2% or whole preferably)
- 2 tbsp of all-purpose flour
- 1/2 tsp of black pepper
- 1 1/2 tsp of salt
- 2 tbsp butter
- 1/2 cup of milk
- 1 cup of water
- Crusty bread (optional as a side)
Directions:
- Place vegetables in the bottom of the slow cooker
- Top with chicken, spices, and water
- Cook options:
Low for 8 hours
Medium for 6 hours
High for 4 hours
- Roux directions:
- In a small saucepan, melt butter over medium heat
- Add flour and continuously whisk for about 5 minutes
- Add milk and whisk until bubbly
- Add the thickened sauce to the slow cooker and mix well until the sauce is blended
- Serve + enjoy
This chunky stew is perfect for cold evenings or large groups. The modified cook time is excellent for families on-the-go! If you plan on consuming this meal over time, Add the stew ingredients, excluding the roux, to a safe freezer bag and enjoy later. It does not get much easier than Creamy Chicken Stew!
