Slow-Cooker White Chicken Chili
Crockpot season is here again, and we have a new favorite to celebrate! This creamy taco soup is inexpensive and flavorful, and the best part is that it's perfect for meal prep and working from home!
Prep Time: 10 minutes
Cook Time: 4-6 hours
Total Time: 6 hours and 10 minutes
Yields: 6 servings
Ingredients:
Two chicken breasts
One 12 oz can of diced tomatoes
One can of black beans (drained)
One can of corn
One packet of ranch seasoning
One packet of taco seasoning
One 8 oz brick of cream cheese
Topping ingredients: (optional)
-Tortilla chips
-Shredded cheese
-Cilantro
Directions:
Place chicken in the crockpot
Pour in diced tomatoes
Drain black beans + place them in the slow-cooker
Pour in corn
Top with ranch and taco seasoning
Place the brick of cream cheese on top and break up until incorporated
Cook on high for four hours or low for six hours
30 minutes prior to serving time, remove the chicken from the crockpot and shred
Place the chicken back + stir until ready
