Four Brunch Recipes For The Lazy Day In

Once you spend a month of Saturdays indoors, you have no choice but to prepare a few meals on your own. A healthy brunch is not only simple to prepare, but you will also find yourself wondering why you paid a small fortune for some of the dishes you have eaten in the past.


Dalgona Coffee

Dalgona coffee originated in India and was initially named, phenti hui, or beaten coffee. It was later nicknamed dalgona after a South Korean actor Jung II-woo ordered it, fell in love (as we all did), and officially dubbed it "dalgona" after a Korean sponge candy with the same name. History class is over; it is time for Home Economics.

Prep Time: 5 minutes 

Cook Time 5 minutes (varies)

Total Time: 10 minutes 

Yields: 1 serving 

Ingredients: 

  • 2 tbs of instant coffee

  • 2 tbs of sugar

  • 2 tbs of water 

  • Your choice of milk and/or creamer

  • Ice (optional)

Directions: 

  • Bring water to a boiling point

  • In a small container mix instant coffee and sugar 

  • Add hot water + whisk until a creamy tan color consistency forms 

  • In an empty cup add ice, milk, and your choice of creamer  

  • Add the whipped coffee on top of the milk (it should float) 

  • Thoroughly incorporate coffee and milk

  • Enjoy! 

Note

With a handheld electric whisk, the whipping process takes about three minutes. Dalgona coffee may take longer to prepare without an electric mixer. This coffee is robust. If you enjoy strong coffee, you will love this drink. If you like your coffee on the sweeter side, add more milk and creamer as desired. Make it your own and add some of your fave complementary sauces and syrups! There is really no way to go wrong with this caffeinated pick me up.

Brunch: breakfast without the alarm.

Avocado Toast: 

Prep Time: 5 minutes 

Total Time: 10 minutes 

Total Time: 15 minutes 

Yields: 2 servings

Ingredients: 

  • 1 avocado

  • 1 tbs of lemon juice

  • 2 eggs

  • 2 slices of bread

  • Crushed red pepper flakes to taste (optional)

  • Salt to taste 

  • Pepper to taste 

  • Splash of milk 

Directions: 

  • In a small bowl, add avocado + lemon juice

  • Mash until a semi-smooth texture forms

  • Set aside 

  • Toast bread slices as desired

  • Set aside

  • In a small bowl, whisk eggs, red pepper flakes, salt, and pepper 

  • In a medium saucepan, over medium heat add milk and whipped egg mixture

  • Continuously stir and scramble the eggs

  • Once the eggs are thoroughly cooked, plate the toast

  • Spread avocado mixture on top of each slice

  • Distribute eggs evenly and place on top of the avocado mash

  • Enjoy! 


Nutella Chocolate Milk

This one is fun for the whole fam, an incredibly simple and yummy drink made to get the party started. If you are a Nutella Hazlenut Spread lover, you will never have that regular chocolate milk ever again.

Prep Time: 5 minutes 

Cook Time 5 minutes

Total Time: 10 minutes 

Yields: 2 servings

Drink milk, but make it fancy.

Ingredients: 

  • 1/2 cup of Nutella 

  • 2 cups of milk

Directions: 

  • Incorporate the Nutella and milk

  • Shake or stir until chocolate milk is formed 

  • Enjoy! 


Strawberry Smoothie Bowl 

Prep Time: 5 minutes 

Cook Time: 5 minutes 

Total Time: 10 minutes 

Yields: 1 serving

Smoothie bowl for the soul.

Ingredients: 

  • 1 cup of strawberries 

  • 1 cup of ice 

  • 1/2 cup of vanilla almond milk

  • 2 tbs of honey 

Topping ingredients (optional):

  • Sliced almonds 

  • Shredded coconut 

  • Chia seeds 

  • Granola

  • Strawberries

Directions: 

  • Add strawberries, ice, almond milk, and honey to a blender 

  • Blend until smooth

  • Add smoothie mixture to a bowl 

  • Place toppings as desired 

  • Enjoy!
