Firecracker Salmon Bites
The days of long, laborious lunches are over! This healthy dish is full of flavor; the best part is, it is a meal for one that takes less than half an hour to create.

Yields: 1 serving (four large pieces)
Ingredients:
Bánh Tráng Ba Cô Gái (Three Ladies Brand) rice paper
Fresh jalapeno, sliced
Avocado slivers (1-1.5 in long, thin)
Green onion, loosely chopped
4 oz fresh salmon
1 tbsp avocado oil
Directions:
Clean + pat dry salmon, and cut into bite-sized pieces (about 1 inch)
In a nonstick pan, over medium heat, preheat avocado oil
Season both sides of salmon with a sprinkle of salt + pepper
Sear salmon on both sides 3.5-4 minutes each
Quickly and carefully dunk rice paper into cold water and place it on a cutting board
Place salmon in the middle of the sheet
Top the salmon with green onion, avocado slices, and jalapeno
Wrapping instructions:
Start from the bottom, fold to the top, then wrap side to side, forming a small burrito shape. Repeat with the remaining salmon
Fry the salmon bites until crispy (about one minute)
These bites make a quick, easy, flavorful, delicious lunch and can be paired well with any Asain sauce.
