Garden Party Lasagna

Step aside tomato lovers- the Garden Party Lasagna has made an entrance! This béchamel-sauce lasagna is not only scrumptious, it has a ton of nutritious benefits like over one-hundred grams of protein and two pounds of vegetables. It is fresh, filling, and the perfect Springtime meal for your week-night rotation.


Prep Time: 30 minutes

Cook Time: 35-40 minutes

Total Time: 1 hour and 15 minutes

Yields: 6 servings

- 3 tbs avocado oil

- 1 whole white onion, diced

- 5 tbs garlic, minced

- 3 tbs crushed red pepper flakes

- 1 tsp dried oregano

- 1 tsp dried basil

- 2 cups mushrooms, thinly sliced

- 1- 16 oz bag spinach

- 1 lb shredded cooked chicken

- 6 ounces no boil, oven ready lasagna noodles

- 1¼ cup gruyere or mozzarella, shredded

Béchamel Sauce:

Yields: 1 serving (8ounces)

- 2 tbs unsalted butter

- 2 tbs all-purpose flour

- 1¼ cups whole milk, heated

- salt to taste

- ground black pepper to taste

You can substitute a béchamel sauce for store-bought jar, cacio e pepe sauce, or alfredo sauce. This recipe calls for two cups, 16 ounces.

Directions:

- Preheat oven to 375°

- Heat a large nonstick skillet over medium-high heat

- Add oil, onions, garlic, crushed red pepper, oregano, basil, and mushrooms,

- Sauté 3-4 minutes, or until mushrooms have softened

- Add fresh spinach and cook until wilted

- Remove the pan from the heat and stir in the chicken

Béchamel Sauce Directions:

- Melt 2 tbsp. unsalted butter in a heavy-bottomed saucepan over medium heat

- Stir in 2 tbsp. all-purpose flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don't let it brown, about 2 minutes

- Slowly add 1¼ cups whole milk, heated, whisking to incorporate

- Bring it to a boil, stirring constantly, as sauce thickens

- Add salt and freshly ground black pepper to taste

- Reduce to low heat, and cook, stirring, 2–3 minutes more

- Remove from the heat and set aside


Assembly:

- Pour 1/2 cup sauce into the baking dish, completely covering the bottom

- Place a layer of noodles on top of the sauce

- Layer on your Garden Party (onion, spinach, mushroom, chicken) mixture

- Layer with cheese

- Repeat these steps 2-3 times completing your dish with a topping of cheese

- Bake uncovered for 35-40 minutes, or until bubbly
