Jalapeño Chicken
Your new favorite easy weeknight meal is here to stay! Jalapeño chicken has quickly become a fan favorite. It is flavorful, filling, and comes together in about half an hour! It is guaranteed to be a hit in your weekly meal rotation.

Yields: 6 servings
Ingredients:
- 2.5 lbs boneless chicken thighs
- 1 small yellow onion, diced
- 2-3 jalapeños, sliced
- 1/3 cup soy sauce
- 1/3 cup cooking oil
- 1/3 cup light brown sugar
- 1 tbsp garlic, minced
- Garlic salt to taste for seasoning
- Black pepper to taste for seasoning
- Corn Starch for coating
Directions:
- In a large pan, heat oil on medium heat
- Cut chicken thighs into bite-sized pieces
- Season with garlic salt and black pepper
- Lightly coat chicken pieces in corn starch
- Brown chicken thighs in the pan on both sides (3-4 minutes per side until golden brown)
- Remove the chicken from heat and set aside
- Remove the cooking oil from the pan
- Slice jalapeños, dice onion, and add to the pan on medium high heat
- Stir until jalapeños are tender and onions are translucent
Glaze Directions:
- In a bowl, combine 1/3 cup soy sauce, 1/3 cup brown sugar, and 1 tbsp minced garlic
- Add glaze to the pan of onions and jalapeños
- Add chicken to the pan and stir until incorporated (about 2-3 minutes)
