Peanut Butter Pad Thai
Peanut butter, spice, and everything nice. This "poor man's" Pad Thai includes everything a great pasta deserves, and it can feed a small army. Enjoy this inexpensive meal packed with heat + rich flavor.

Yields: 6 servings
Ingredients:
4 packs (any flavor) Ramen noodles
2 cups shredded rotisserie chicken
1 cup chopped bell peppers
1/2 cup peanut butter
6 tbs Asian sweet chili sauce
2/3 cup olive oil, separated
3 tbs crushed red pepper flakes
2 tbs soy sauce
juice of one lime
Pasta Directions:
Thoroughly cook Ramen noodles + set aside
Shred rotisserie chicken + set aside
Sauce Directions:
In a medium pan, heat 3 tbs olive oil
Add thawed bell peppers
Add peanut butter
Add sweet chili sauce
Add soy sauce
Add chicken
Add red pepper flakes
Add lime juice
Add remaining olive oil
Add noodles
Stir until fully incorporated
